Functions Thickening Syneresis Control  Gelling synergy with kappa carrageenan

Made from refined locust bean gum, our GENU® Gum is manufactured to be cleaner than others. Also called carob bean gum, it is a natural ingredient extracted from the seed of the carob tree. It is ideal as an agent in ice cream to prevent ice crystals from forming or as a thickener in salad dressing. When combined with either xanthan gum or carrageenan, GENU Gum can result in desirable product qualities such reduced syneresis and increased gelling for desserts, cream cheeses and pet foods
