How is Salted Buttermilk Formulated?

Salted buttermilk is a simple formulation made with yogurt, salt and spices. Challenges occur during the heat treatment when proteins tend to aggregate and form sedimentation as well as a gritty mouthfeel. 

GENU® Pectin can prevent protein aggregation by creating an electrostatic interaction with the protein molecules at an acidic pH to stabilize them. Salt can also complicate the interaction, increasing ionic strength. The higher the salt content, the more difficult it can be to stabilize the formulation. However, new GENU® Pectin YM-SAL-200 was developed to withstand a range of salt from 0.4% to 0.8% and protein (1% to 2%). This provides formulators with the recipe flexibility to create products with the higher salt content that consumers prefer.

Pectin acts by creating electrostatic interactions with the proteins to prevent aggregation. The particle size is kept low, resulting in:

Hi, I’m Suresh Sharma, the STS Manager for CP Kelco in Mumbai. I have a Master’s degree in food technology and over 20 years of experience in the food industry. I’m going to introduce you to a traditional Indian-style beverage that is gaining a new following in the healthy on-the-go beverage segment, salted buttermilk. In India, buttermilk is known as chaas. It is a fermented dairy drink that has a thinner consistency and lighter mouth feel.

It is low in fat, refreshing, and thirst quenching. This salted buttermilk is mainly made from milk, salt, and spices with the fermentation process using GENU® Pectin. Our GENU® Pectin gives protein stability in the high salt concentration and heat treatment which is required in the processing of long shelf-life buttermilk. It also adds mouthfeel. This nature-based pectin is sourced from citrus peels and an easily recognizable label-friendly ingredient for consumers.

To create the prototype, the yogurt base is prepared. Then the packing is dispersed in the hot water, cooled and mixed with the yogurt base to ensure the best protein protection during the heating process. Ingredients for Success With Plant-Based Yogurt Alternatives

With campaigns such as ‘Veganuary’ attracting global attention and 51% average annual growth in food and beverage launches with plant-based claims (Innova Market Insights: Global, CAGR 2015-2020), the plant-based diet has gone mainstream. One in four consumers globally is “actively trying to increase consumption of plant-based protein,” according to Global Data’s 2020 dairy trend report.
